I got another tip for you on how to be less fat. This tip is actually a two for one. If you’re looking to be less fat and are a cheap bastard at the same time. You’re going to love this one. It’s one I used myself to lose 175 pounds and still use because I’m still a fat kid at heart.
If you’re looking at tips on how to be less fat then I’m willing to bet you and I have the same mentality when it comes to food. This means that you over eat like I used to or sometimes still do or want too. I’m also willing to bet that after you’ve over ate, you feel like shit and the moment you don’t feel like shit, that means it’s time to eat again. Not that you’re hungry, you just don’t feel full anymore or like shit, so it’s time to eat. I know the feeling.
One of the obvious reasons you’re fat is because you like food. A lot of food. At one time. Everyday. Numerous times throughout the day. What if I suggested to you that you only make a half a box of Macaroni and Cheese so you won’t be tempted to eat the whole box? Yes, you will eat the whole box. One box is one serving in our minds. Let’s not kid ourselves. Well, we both know making half a box won’t happen and just doesn’t make sense. You can, however, still cut back and save calories by adding half the cheese. Not rocket science and not hard to do either.
We are cutting back and having what we want at the same time. I love macaroni and cheese just like all people should. Here is where you cheap bastards get excited. With a box of macaroni and cheese you can get two dinners worth. Instead of using the whole pouch of cheese sauce, we are only going to use half. (Save the other half of the cheese sauce, buy a box of elbow macaroni and make mac and cheese another time.) We are also going to add in additional stuff because I’m guessing you’re not a vegetable person either. So like a child we have to sneak some vegetables into your mac and cheese.
This dish kinda reminded me of the casseroles my Mom made when I was a kid. I say kinda because my Ma’s casseroles had a ton more cheese. Tasty? Yes. Was I 325 pounds of fun? Yes. So this isn’t my Ma’s casserole. Cut back or be fat? Your choice.

Macaroni and Cheese with Roasted Cauliflower and Jalapeños
1 pound Cauliflower
-I roasted the cauliflower for one hour at 350 degrees. No oil, nothing.
-chop the cauliflower into bite size pieces. You should get about 1 1/2 cups worth.
1/4c pickled jalapeños
-finely dice the jalapeños. A 1/4c makes for a spicy dish. Just so you know. I use the La Costena brand.
1/2c bread crumbs
-combine the two together, set aside.
Macaroni and Cheese
-make the Macaroni and Cheese according to directions on the box. I prefer Krafts Macaroni and Shells.
-using only half the packet of cheese
-combine the mac and cheese with the cauliflower and jalapeños
-layer into a pie dish or casserole dish and sprinkle on the bread crumbs
The bread crumbs are completely optional. I added them for a little texture and flavor with the paprika.
