I made a vanilla buttercream back in the day that Jell-O wanted to feature on their website.

Jell-O reached out once again asking for a Lemon Buttercream using of course their Instant Lemon pudding.
They said I’d sign over the recipe for them to use. Kindly enough they would let everyone know the recipe came from me. Just like with the Vanilla Buttercream.
“No way!” I barked. “I’m a big deal now. If you want me to create a recipe for you I want money. And lots of it!”
Jello responded, “You’re a nobody loser with 700 followers. We’ll share it like last time.”
“Deal!!” I shouted in agreement.
Damn them and their business degrees!!
So I made this Lemon Buttercream using Jello which turned out divine. Has a great balance and smooth flavor.
You ever notice most lemon desserts are so lemony they make your teeth itch? Little too much lemon if you ask me. This doesn’t do that. It’s sweet with a subtle zest of lemon.
It has just the perfect sweetness with a ting of lemon. This lemon buttercream taste like a glass of lemonade on a hot summer day. Cool and refreshing, sitting on the front porch watching summer go by.

Makes enough to cover a 9 inch cake
Lemon Jell-O Pudding Buttercream
450g. Powdered sugar
25g. Instant Jell-O Lemon Pudding (1 heaping tablespoon)
45g. Lemon juice (3 Tbsp – about the juice of 1 lemon)
Zest from 1 lemon
-combine powdered sugar, butter, lemon zest in a mixing bowl and set aside.
-in a separate bowl, combine the Jell-O Lemon Pudding mix with the fresh lemon juice and whisk together to get a nice smooth paste.
-combine the lemon paste with your powdered sugar mix and mix on medium speed until you get a light and fluffy buttercream. About 3-5 minutes.
Decorate your cupcakes or cakes and enjoy summer!!
